These are flour-free muffins built on blended oats, with whole raspberries folded through and a quick lime glaze on top. Six moist muffins at roughly 120 calories each — an honest snack or light breakfast.

One note up front: the original listed these at 11.5g protein each. The real ingredients (oats, a little yogurt, one scoop of protein) work out closer to 8g — so that’s the honest number here.

Ingredients

  • For the muffins
  • Oats — 1½ cups (rolled or quick) [P 17 C 91 F 9]
  • Protein powder — 1 scoop, ~30 g (vanilla) [P 24 C 3 F 1]
  • Fat-free plain Greek yogurt — ¼ cup [P 6 C 2 F 0]
  • Raspberries — ½ cup (fresh or frozen) [P 1 C 9 F 0]
  • Unsweetened apple sauce — 2 tbsp [P 0 C 4 F 0]
  • Sugar-free maple syrup — ¼ cup
  • Baking powder — 2 tsp
  • Salt — a pinch
  • For the glaze
  • Lime juice — 1 tsp
  • Fat-free plain Greek yogurt — 1 tsp
  • Stevia powder (or protein powder) — 2 tbsp

Method

  1. Heat the oven to 350°F / 175°C.
  2. Make the batter. Blend 1 cup of the oats into a fine powder. Combine with the remaining ½ cup oats and all other muffin ingredients except the raspberries. Mix well.
  3. Fold in raspberries. Add them gently so they keep their shape.
  4. Bake. Divide into a greased 6-cup muffin tray and bake 15–17 minutes.
  5. Glaze. Mix the lime juice, yogurt and stevia and drizzle over the cooled muffins.

What to eat it with

  • On their own — a low-cal snack or breakfast-on-the-go.
  • A smear of Greek yogurt or cream cheese — bumps the protein.
  • A coffee — they’re not too sweet.

Variations

  • Thicker glaze: add 1 tbsp fat-free cream cheese.
  • Powdered sweetener instead of syrup: add ¼ cup milk to keep the batter loose.
  • Different berry: blueberries or chopped strawberries.

Honest notes

  • Protein correction: listed at 11.5g, honestly ~8g per muffin — 1½ cups of oats plus one scoop can’t reach 11.5g across six muffins, and the ~120-cal figure actually fits 8g better.
  • Fibre: about 3g a muffin, from the oats and raspberries.
  • Don’t refrigerate: the fridge dries these out fast — room temp keeps them moist.
