A warm apple crisp for one that actually hits your protein: cinnamon apples under an oat crisp made with protein powder, finished with a yogurt-protein “custard.” The whole thing is 29g of protein for 312 calories.
Apple sauce bulks the fruit layer so half an apple stretches into a full crisp.
Ingredients
- For the apples
- Apple — ½ medium, very thinly sliced [P 0 C 8 F 0]
- Unsweetened apple sauce — ⅓ cup [P 0 C 12 F 0]
- Sugar-free maple syrup — 1 tbsp
- Cinnamon — ½ tsp
- For the crisp
- Oats — ¼ cup (rolled or quick) [P 3 C 14 F 1]
- Protein powder — ½ scoop, ~15 g [P 12 C 2 F 1]
- Light butter — 1 tbsp, melted [P 0 C 0 F 4]
- Cinnamon — ¼ tsp
- For the topping
- Fat-free plain Greek yogurt — ¼ cup [P 6 C 2 F 0]
- Protein powder — ½ scoop, ~15 g [P 12 C 1 F 0]
Method
- Heat the oven to 375°F / 190°C.
- Apples. Mix the apple, apple sauce, maple and ½ tsp cinnamon.
- Crisp. Mix the oats, ¼ tsp cinnamon, ½ scoop protein and melted butter.
- Assemble. Spread the apples in a dish, top with the crisp, and bake 20–25 minutes.
- Custard. Mix the yogurt and ½ scoop protein; spoon over when serving.
What to eat it with
- The yogurt-protein custard — built in.
- A few chopped nuts (adds fat).
- Extra cinnamon.
Variations
- Frozen berries: blueberries or raspberries work in place of apple.
- Crispier: a light spray of oil on the topping before baking.
- Dairy-free: plant yogurt and a plant protein.
Honest notes
- Fibre: about 5g, from the oats and apple.
- Protein depends on your powder: the 29g assumes a ~30g mostly-protein scoop.
- Don’t overbake: protein-powder bakes dry out fast — pull it while still soft.
