A warm chocolate-chip cookie in a bowl, ready in five minutes and packing 25g of protein for 202 calories. Blended oats, protein and apple sauce microwave into a soft, spoonable cookie.
Fifty seconds is usually all it needs — a few seconds longer and it goes cakey and dry.
Ingredients
- Oats — ¼ cup (rolled or quick) [P 3 C 14 F 1]
- Protein powder — 1 scoop, ~30 g (vanilla) [P 24 C 3 F 1]
- Unsweetened apple sauce — ¼ cup [P 0 C 6 F 0]
- Unsweetened cocoa powder — 1 tbsp [P 1 C 3 F 1]
- Fat-free plain Greek yogurt — 1 tbsp [P 1 C 1 F 0]
- Sugar-free maple syrup — 1 tbsp
- Dark chocolate chips — 1 tsp [P 0 C 2 F 1]
- Vanilla extract — ¼ tsp
Method
- Mix. Blend the oats into a powder, then mix with everything except the chocolate chips until smooth.
- Top and microwave. Spread the chocolate chips over the top, then microwave 50 seconds — don’t overcook.
What to eat it with
- A spoon of yogurt on top.
- Raisins, coconut or nuts stirred in.
- A glass of milk.
Variations
- Chocolate: use chocolate protein and add more cocoa.
- Peanut butter: a teaspoon swirled in (adds fat).
- Dairy-free: plant yogurt and plant protein.
Honest notes
- Fibre: about 4g, from the oats and cocoa.
- Protein depends on your powder: the 25g assumes a ~30g vanilla scoop (honest math actually runs a touch higher, so the figure is conservative).
- Best warm: eat it straight from the microwave while it’s gooey.
