  • For the apples
  • Apple — ½ medium, very thinly sliced [P 0 C 8 F 0]
  • Unsweetened apple sauce — ⅓ cup [P 0 C 12 F 0]
  • Sugar-free maple syrup — 1 tbsp
  • Cinnamon — ½ tsp
  • For the crisp
  • Oats — ¼ cup (rolled or quick) [P 3 C 14 F 1]
  • Protein powder — ½ scoop, ~15 g [P 12 C 2 F 1]
  • Light butter — 1 tbsp, melted [P 0 C 0 F 4]
  • Cinnamon — ¼ tsp
  • For the topping
  • Fat-free plain Greek yogurt — ¼ cup [P 6 C 2 F 0]
  • Protein powder — ½ scoop, ~15 g [P 12 C 1 F 0]

Method

  1. Heat the oven to 375°F / 190°C.
  2. Apples. Mix the apple, apple sauce, maple and ½ tsp cinnamon.
  3. Crisp. Mix the oats, ¼ tsp cinnamon, ½ scoop protein and melted butter.
  4. Assemble. Spread the apples in a dish, top with the crisp, and bake 20–25 minutes.
  5. Custard. Mix the yogurt and ½ scoop protein; spoon over when serving.

What to eat it with

  • The yogurt-protein custard — built in.
  • A few chopped nuts (adds fat).
  • Extra cinnamon.

Variations

  • Frozen berries: blueberries or raspberries work in place of apple.
  • Crispier: a light spray of oil on the topping before baking.
  • Dairy-free: plant yogurt and a plant protein.

  • Protein depends on your powder: the 29g assumes a ~30g mostly-protein scoop.
  • Don’t overbake: protein-powder bakes dry out fast — pull it while still soft.
