This one hides a raspberry jam layer in the middle so every few spoons hits the “jelly” like a filled donut. One jar is 44g of protein for 366 calories and just 3g of fat.
Cooking the frozen raspberries down into a quick jam is what makes the filling read as jelly instead of just fruit.
Ingredients
- For the raspberry filling
- Frozen raspberries — ½ cup [P 1 C 9 F 0]
- Honey (or sweetener) — ½ tsp
- For the overnight oats
- Fat-free plain Greek yogurt — ½ cup [P 11 C 4 F 0]
- Protein powder — 1 scoop, ~30 g (vanilla) [P 25 C 3 F 1]
- Oats — ⅓ cup (rolled or quick) [P 3 C 18 F 2]
- Milk — ¼ cup (1% skim) [P 2 C 3 F 0]
- Honey (or sweetener) — ½ tsp
- Cinnamon — ¼ tsp
Method
- Make the jam. Cook the raspberries and ½ tsp honey in a hot pan until they break down into a jam; set aside.
- Mix the oats. Combine the oats, yogurt, milk, protein powder, ½ tsp honey and cinnamon.
- Layer. In a jar, add half the oat mix, then the raspberry jam, then the rest of the oats. Seal and refrigerate 3–4 hours or overnight.
What to eat it with
- As-is — the filling is the whole point.
- Extra cinnamon on top before eating.
- A few fresh raspberries for garnish.
Variations
- Different jam: strawberries or mixed berries work the same way.
- Warm: microwave briefly for a cooked-jam feel.
- Dairy-free: plant yogurt and almond milk.
Honest notes
- Fibre: about 7g — raspberries are one of the highest-fibre fruits, which is why this jar fills you up.
- Sweetener: honey adds a touch of sugar; a calorie-free sweetener keeps it leaner.
- Macros: reconcile with the 366 cal / 44g protein listed; no correction needed.
