This is the drive-through breakfast sandwich rebuilt from scratch: a seasoned turkey-sausage patty, a neat egg-white round set in a mason-jar ring, cheese and mashed avocado on a toasted English muffin. Each sandwich is 28g of protein for 344 calories.
Making the sausage yourself from lean ground turkey is what keeps the fat down versus a store-bought patty.
Ingredients
- For the turkey sausage
- Ground turkey — 113 g (½ cup, 93% lean) [P 26 C 0 F 10]
- Olive oil — ¼ tsp (or spray)
- Salt, pepper, garlic powder, paprika, thyme — to taste
- For the egg sandwich
- Egg whites — ½ cup [P 13 C 1 F 0]
- English muffins — 2, whole wheat [P 10 C 52 F 4]
- Low-fat cheese — 2 tbsp (marble or mozzarella) [P 4 C 1 F 3]
- Avocado — 1 small, mashed [P 3 C 8 F 11]
- Sugar-free ketchup or maple syrup — 2 tbsp
- Olive oil — ¼ tsp (or spray)
- Salt — to taste
Method
- Make the patties. Season the ground turkey and form 2 thin patties, slightly wider than the muffin. Cook 2–3 minutes a side until cooked through, then set aside.
- Set the eggs. Grease 2 mason-jar rings, place in the pan, pour ½ cup egg whites split between them, add a splash of water and cover to steam ~2 minutes until set. (No rings? Cook flat, fold, and halve.)
- Build. Toast the muffins and layer cheese, turkey, ketchup/maple, egg and mashed avocado.
What to eat it with
- On its own — a complete handheld breakfast.
- Hot sauce — a spicy lift.
- A side of fruit — rounds out the plate.
Variations
- Leaner: use egg whites only and skip or halve the avocado to cut the fat.
- Spicier: add ground sage or chilli to the turkey.
- Bun swap: whole-wheat hamburger buns work.
Honest notes
- Fibre: about 5g a sandwich, from the whole-wheat muffin and avocado.
- Avocado is the fat lever: a full small avocado can push the fat above the listed 14g — use half if you want it leaner.
- Macros: reconcile with the per-sandwich 344 cal / 28g protein listed using a modest avocado portion.
