Ingredients

  • For the turkey sausage

  • Salt, pepper, garlic powder, paprika, thyme — to taste
  • For the egg sandwich
  • Egg whites — ½ cup [P 13 C 1 F 0]

  • Low-fat cheese — 2 tbsp (marble or mozzarella) [P 4 C 1 F 3]
  • Avocado — 1 small, mashed [P 3 C 8 F 11]
  • Sugar-free ketchup or maple syrup — 2 tbsp
  • Olive oil — ¼ tsp (or spray)
  • Salt — to taste

Method

  1. Make the patties. Season the ground turkey and form 2 thin patties, slightly wider than the muffin. Cook 2–3 minutes a side until cooked through, then set aside.
  2. Set the eggs. Grease 2 mason-jar rings, place in the pan, pour ½ cup egg whites split between them, add a splash of water and cover to steam ~2 minutes until set. (No rings? Cook flat, fold, and halve.)
  3. Build. Toast the muffins and layer cheese, turkey, ketchup/maple, egg and mashed avocado.

  • Leaner: use egg whites only and skip or halve the avocado to cut the fat.
